Had a wonderful concert last night. And as promised here are the recipes for the muffins I made. A huge thank you to my friend Irene C. for the basic recipe. Hope you enjoy making them and eating them ;)

And just a little note: 1 cup = 250ml

Basic recipe:
125g butter, softened
1/2 cup sugar (use brown for the banana walnut muffins, white for the rest)
2 eggs
1/3 cup milk (replace 1 200ml tub of fruits of the forest yogurt for the fruits of the forest muffins)
1 3/4 cups plain flour
1 teaspoon of baking powder

Method:

Preheat the oven to 180 degrees C. Mix the butter and sugar together for approx. 2 – 3 minutes until white and creamy. Add the eggs one at a time mixing well after every addition. Mix the baking powder and flour well. Add alternatively with the milk/yogurt to the batter. Mix well. Add the following ingredients to the batter as desired:

Banana and walnut: add 2 ripe, mashed bananas and a couple handfuls of chopped walnuts to the batter
Vanilla and white chocolate: add the scraped seeds of 1 vanilla pod and 100g chopped white chocolate to the batter
Fruits of the forest and yogurt: add a couple of handfuls frozen fruits of the forest to the batter
Chocolate and orange: add 2 heaped teaspoons of cocoa powder and mix well with the flour/baking powder mixture. Add to the batter as specified above. Add the grated peel and juice of one orange to the final batter.

Once you’ve added your extra ingredients, spoon the mixture evenly into a 12-cup muffin tray and bake for 20 – 25 minutes. Once baked, take them out of the oven and cover them immediately with aluminum foil (this keeps them moist).  Eat them whenever or however you like – hot, warm, cold, with milk, cocoa, coffee, brandy…
